Pistachios Roasted in Curry

Ingredient

Curry powder, two tablespoons Two teaspoons of canola or coconut oil

One spoonful of maple syrup Half a teaspoon of salt one-eighth teaspoon of cayenne

Three cups of salted, roasted, shelled pistachios Three tsp of brown sugar

Turn the oven on at 300°. Mix the first five ingredients together in a small pot. Cook, stirring,

over low heat until oil melts and becomes aromatic. Take off the heat and mix in the pistachios. Transfer onto a 15 x 10 x 1 inch baking pan lined with paper.

Bake the pistachios for 15 to 18 minutes, stirring periodically, or until they are gently browned and seem dry. 

 Add some brown sugar and stir to coat. Let cool fully. Keep enclosed in a sealed container.
