A Chia and Mango Pudding with Coconut

Easy chia seed pudding: mix all ingredients and chill overnight. Its tapioca-like texture is irresistible. Soaked small chia seeds grow more than four times. 

They have little taste, so they absorb everything you add. The texture resembles passion fruit seeds. This is the same chia seed used to produce Chia Pets.  

The Kim Kardashian chia pudding post has made chia pudding trend again, even though this recipe was created in 2012. I thought this would be a good time to reshoot and update the photographs. 

Chia Pudding—Healthy? Omega-3s, our beneficial fats, are abundant in chia seeds. Chia seeds include 139 calories, 4 grams of protein, 9 grams of fat, 

12 grams of carbs, 11 grams of fiber, vitamins, and minerals in two tablespoons. They go well in pudding, smoothies, muffins, and overnight oats, my fave.  

Making Chia Pudding Chia pudding is made by mixing chia seeds with milk, dairy-free milk, fruit juice, and sugar. Stir well and wait 30 minutes. You should mix the seeds again to prevent clumping. Add fruit, cover, and refrigerate overnight. Serve in two bowls. 

Knowing the chia seed-to-liquid ratio is crucial to preparing chia pudding! I get the best results with 2 teaspoons of chia seeds and 1/2 cup liquid.
